These delicious Air Fryer Cheese Enchiladas will have your family running back for more! Corn tortillas filled with cheese and covered with a spicy enchilada sauce. Made from scratch, these enchiladas are ready in 30 minutes. A great game-day snack or as part of a Mexican meal.

Ingredients
3tbspbutter
3tbspall-purpose flour
2cupschicken broth
1cupSour cream
2tspgarlic powder
2tsponion powder
1/2cupChopped green chilescanned
2lbsMonterey Jack cheeseshredded
15Corn Tortillas
Instructions
In a saucepan over a medium heat, melt your butter. When the butter starts to boil and foam, whisk in flour and cook for 3 minutes or until golden brown.
Add the broth and bring to a boil, stirring frequently.
Once boiling, add the sour cream and whisk until melted. Allow the cream sauce to thicken. Add the chiles and spices.
Remove from the heat and allow to cool completely.Microwave the tortillas to soften them.In a pan that fits your air fryer basket, pour sauce to coat the bottom.Roll your tortillas with a little shredded cheese.
Place the rolled tortillas in the pan. Coat the top of the tortillas with more sauce and top with cheese.
Cook at 350F/175C for 6 minutes or until cheese is melted and golden brown.
Garnish with sour cream, green onions, and cilantro.
