For the Salmon
4salmon fillets3oz
2tbspMinced Garlic
1/3cupParmesan cheese
2/3cuppanko breadcrumbs
1tbspFresh Chivesfinely chopped
1tbspFresh Cilantrofinely chopped
1lemonfor zest
2tspolive oil
2tbspbuttermelted
1tbspdijon mustard
salt and pepper
For the Wine Sauce
2tbspbutter
1tbspMinced Garlic
1cuprose wine
1cupheavy whipping cream
1tspFresh Chivesfinely chopped
1tspFresh Cilantrofinely chopped
Instructions
Salmon
Preheat the air fryer to 350°F/175°C. Line a sheet that fits your air fryer basket with parchment paper.Combine Parmesan, panko, chives, and lemon zest in a mixing bowl. Stir in the olive oil and set aside.
Salt and pepper the fillets.Combine melted butter, mustard, and minced garlic in a small bowl.Brush the top of the salmon generously with garlic butter.
Press the tops and sides of the salmon into the panko parmesan mixture. Place in the prepared tray.
Place tray in the air fryer basket, spray salmon with oil, cook for 10 minutes or until golden brown on top.
Wine Sauce
Add the wine, garlic, chives, cilantro, and butter to a medium saucepan over medium heat. Bring to a simmer. Reduce by three-fourths.
Once reduced, add the cream and reduce for 3 minutes, until the sauce slightly thickens. Serve with lemon, garnish, and the side of your choice.
