Make an air fryer chicken quesadilla with leftover chicken, your favorite cheese, and salsa of choice. This crispy snack is easy to make and full of flavor.

Ingredients
4flour tortillas
2cupscheddar cheese shredded
2 cups rotisserie chicken(cooked and shredded)
1/2cupsalsa
Instructions
Microwave the tortillas for 20 seconds to soften them.
In a bowl, combine shredded rotisserie chicken and salsa.
Add about a ½ cup of shredded cheese on top of one half of the tortilla. Add about a ½ cup of the chicken mixture on top of the cheese.
Fold over. Repeat with remaining tortillas.
Spray the air fryer basket and place the quesadillas in the air fryer basket. Spray the top of the tortilla with oil for extra crispiness.
Cook for 4 minutes at 350°F. Flip the quesadilla. Cook for another 4 minutes at the same temperature.
Notes
This recipe can be made in an air fryer unit with a basket or an air fryer oven. If you are using an air fryer oven, use the middle rack and choose the “Air Fry” function.
Check your food as it cooks. Each air fryer runs a bit differently. Make sure to check your food as it’s cooking to learn your air fryer better and avoid over- or undercooking.
Use any type of cooked chicken for this recipe. Don’t have rotisserie chicken? No problem. Just chop up some leftover cooked chicken and use it for this recipe.
