Instructions
Pat the chicken dry with paper towels. Then cut it into thin strips and put in a bowl.
Add olive oil, salt and all spices to the bowl, mixing thoroughly. Cover and keep efrigerated for up to an hour if needed while you prepare the rest of your meal.
Cut the bell pepper and peeled shallot into thin strips
Add the vegetables to the bowl with the chicken and stir well to combine.
Transfer the chicken with peppers and onions to the air fryer basket in a single layer. Cook for 12 minutes at 400ºF/200ºC.
Flip the chicken and vegetables to the other side and cook for another 8 minutes at 400ºF/200ºC, or until the chicken is fully cooked.
While the fajitas are air frying, finely chop the tomatoes and parsley.
Remove the chicken and veggies from the air fryer basket. Add the filling to 3 or 4 tortillas, then return the fajitas to the air fryer. Reduce the heat to 190°F and air fryer for another 4 minutes to crisp up the shells.
Add the chopped tomatoes and parsley to the tortillas and serve the fajitas immediately. Drizzle with lime juice.
Notes
Be sure to slice the veggies thinly so that they will cook at the same rate as the chicken. If for some reason your chicken is done but your veggies are not, you will want to pull out the chicken and give the peppers and onion a few extra minutes.
Chicken is fully cooked when it reaches an internal temperature of 165°F/74°C.
I like to cook the chicken and the veggies mixed up so that the flavors of each mingle together. You can also put the chicken on one half of the basket and the vegetables on the other if you find it easier.
To give the peppers and shallot a bit of char, I don't suggest lining the air fryer basket with parchment paper. If you want the veggies a bit less cooked, you can add parchment. This makes for easier clean up too!
I don't usually bother to clean the air fryer basket before putting the tortillas in. They will absorb the flavor left behind by the chicken! But if the basket has a lot of residue, you can briefly wipe it out first.
Adjust the seasonings. If you like spice, try adding spicy fajita seasoning or a bit of chili powder to the chicken.
Marinate if you have time. Letting the chicken chill in the fridge for an hour with the oil and seasonings will give it even more delicious flavor.
Adding the filled tortillas to the air fryer is optional. If you'd prefer the tortillas to be soft, warm them in the microwave or in a hot skillet instead.
