Slice the creamer potatoes in halves or quarters. The pieces should be about 1 inch in size.
Add the potatoes to a mixing bowl.
Top with oil, salt, garlic powder, and black pepper. Toss until the potatoes are completely coated.
Place the potatoes into the air fryer basket in a single layer.
Air fry at 380°F/190°C for 19-22 minutes, shaking the basket halfway through the cooking time.
Remove the potatoes from the air fryer when they are cripsy and goldne brown. Serve with chopped parsley.

Notes
Creamer potatoes are sometimes called new potatoes. You can use any variety or color that you enjoy. This recipe will also work with large potatoes, just be sure to cut them into pieces no larger than 1 inch.
Avoid overfilling the air fryer basket. It's fine to have the potatoes touching and overlapping but be sure not to try to cook more than a pound and a half of potatoes at a time.
To Store Leftovers: Roasted potatoes should be kept in the fridge in an airtight container, and will stay fresh for up to 5 days.
