Clean the chicken wings and place them in a medium bowl. Season them with salt, pepper, and 1 Tablespoon of olive oil. Mix until evenly combined.
Cook the wings at 390°F (200 °C)for 20 to 25 minutes, depending on how crispy you want them. If you have a small air fryer, work in batches if needed.
Add the guajillo chilis to a small saucepan. Add 1/2 cup of water and let it boil for 6 minutes.
Pour the chilies (with the water left in the saucepan), together with the garlic, onion, paprika, orange juice, lime juice, and vinegar, into a blender. Blend until smooth.
Use a strainer to make sure you remove any pieces of chili, so it is completely smooth.
Add one tablespoon of olive oil to a medium saucepan. Let it heat up and pour the sauce into the pan and heat on low until it thickens a bit, about 10 minutes. Stirring constantly. While it's heating up, add in the honey, and additional salt and pepper to taste. Mix until combined.
Remove the chicken wings from the air fryer and place them into a large mixing bowl. Pour the sauce on top and toss until evenly covered.
Garnish with cilantro (optional, but recommended) and serve!

Garnish with cilantro and serve with blue cheese dressing.
If you want them very spicy, leave the guajillo chilis with the seeds and veins. If you want them mild, leave them in only two of the chilis.
Add a tablespoon or two of sriracha to the sauce for extra spice.
