1lbroasted turkey(leftover)
2eggs
1/2 cupGreek yogurt
2onions yellow
1/3 cupbreadcrumbs
1/2tsppaprika
1/2tspgarlic powder
1/2 tspground coriander
1/4tspsalt
1/2 tsp pepper
fresh dill or parsley
olive oil spray
Instructions
Preheat your air fryer to 400ºF (205ºC).
Debone leftover turkey meat from the thighs, legs, and breast of a cooked turkey. Shred the roasted turkey in a blender.
Blend the peeled onion and add it to the bowl with the turkey.
Add eggs, salt, and spices to the bowl.
Add Greek yogurt, breadcrumbs, and a few pinches of black pepper. Mix thoroughly.
Chop finely and add fresh dill or parsley.
Line the air fryer basket with parchment paper and drizzle with olive oil. With wet hands, make patties and place on parchment paper. Air fry for 8 minutes at 400ºF (205ºC).
After 8 minutes, the patties will become golden in color. Carefully flip them to the other side and cook for another 3 minutes.
Notes
Cook your turkey patties in batches. Don’t overcrowd your air fryer basket. To get that rich, golden-brown texture, make sure the turkey patties have enough space to cook.
This recipe can be made in an air fryer unit with a basket or an air fryer oven. If you are using an air fryer oven, use the middle rack and choose the “Air Fry” function.
