These air fryer egg rolls are crisp and crunchy on the outside with a simple pork and cabbage filling. These air fryer egg rolls are inspired by everyone’s favorite take-out treat but we’re adding a bit more flavor with the addition of hoisin and sweet chili sauces!

Ingredients
1tbsptoasted sesame oil
1lbground pork
1bag (14 oz)coleslaw mix
1tspgrated garlic
1tspgrated ginger
2tbspsoy sauce
1tbsphoisin sauce
1tbspsweet chili sauceplus more for dipping
1/4cupthinly sliced scallions
10egg roll wrappers
1large eggbeaten with a splash of water to create an egg wash
Instructions
Heat a large skillet over medium-high heat and add the sesame oil. When the oil is fragrant, add the pork and cook for 5 minutes, or until it is fully browned and no more pink remains. Make sure to stir the pork and break it into very small pieces as it cooks.
Next add the coleslaw mix, garlic, and ginger. Stir and cook for an additional 2 minutes.
In a small bowl, stir together the soy sauce, hoisin sauce, and sweet chili sauce. Add the mixture to the pork and cabbage and stir to combine. Remove the pan from the heat and add the scallions.
Spray your air fryer basket with olive oil spray, allowing the filling to cool for 5 minutes while you preheat the air fryer to 375ºF/190ºC.
Fill each egg roll wrapper with ⅓ cup of filling. Fold in the corners of the egg roll wrapper so that the filling is covered. Then fold the bottom up to cover the filling as well. Gently roll from bottom to top.
Brush the top edge of the egg roll wrapper with the egg wash and press it to seal. Repeat steps 7-8 with the remaining egg rolls.
Place a few eggrolls seam side down into the preheated air fryer. Brush the tops of the egg rolls lightly with egg wash and then spray them with olive oil spray.
Cook for 8 minutes, then flip the egg rolls and cook them for an additional 3-5 minutes, or until golden brown and crisp. Continue cooking the egg rolls in batches, making sure not to overcrowd the air fryer basket. Serve the eggrolls immediately, garnished with green onion and with sweet chili sauce for dipping.
Notes
Storage in Refrigerator: The egg rolls can be stored in an air tight container in the refrigerator for 3-4 days. To reheat, place the eggs rolls in the air fryer at 350°F for 1 minute. Flip the egg rolls over and cook them for 1 more minute, or until completely heated through. Storage in Freezer: Place egg rolls on a baking sheet and freeze for 1 hour. Then transfer the egg rolls to an air tight container and freeze for up to 3 months. To reheat, place the egg rolls in the air fryer, spray with oil, and cook for 2-3 minutes at 375ºF/190ºC until fully heated through.Pro Tip: This recipe can be made in the air fryer unit with a basket or the air fryer oven.
