15 slices6ozCanadian bacon
6Eggs
Hollandaise Sauce Ingredients
4Egg yolks
1tbspLemon juice
1/2cupCream
1/2tspSalt
1/2tspPepper
1/2tspPaprika
Instructions
Place an inch of water in a saucepan. Place over high heat and set a glass bowl over boiling water. In the glass bowl, put the sauce ingredients in and whisk continuously until sauce thickens and temperature reaches 160°F/71ºC. Set aside.
Place oiled Ramekins in the air fryer basket and crack one egg in each. Cook on 380°F/193ºC for 5 minutes.
Place ham slices in the air fryer basket and cook on 400°F/204ºC for 5 minutes. While ham is cooking, toast the muffins.
To assemble, place 1 oz of ham on a half a muffin. Top with egg and hollandaise sauce and garnish with parsley.
