ingredients you’ll need
- Vegan Butter – These cookies are soft and chewy using vegan butter. Soften the butter before you start mixing.
- Light Brown Sugar – The caramel flavor of brown sugar is delicious in this recipe.
- Granulated Sugar – A combination of white and brown sugar in cookie recipes gives the perfect somewhat soft, somewhat crispy texture.
- Flax Egg – To make a flax egg replacement, combine 1 Tbsp of ground flaxseed with 3 Tbsp of water. If you aren’t concerned with making this recipe vegan, just use an egg.
- Vanilla Extract – a good quality pure vanilla extract is a must for this recipe.
- Ground Cinnamon – warm and inviting, cinnamon pairs so well with oatmeal.
- All-Purpose Flour – Use your favorite blend for baking, or see my suggestions below.
- Rolled Oats – You can’t make oatmeal cookies without them! See notes below about gluten-free oats.
- Baking Soda – This helps the cookies rise.
- Salt – To balance the sweet flavors, we add a bit of salt.
- Raisins – The perfect add-in for oatmeal cookies.
how to make them
- Prepare the flax egg by whisking together 1 Tbsp ground flaxseed and 3 Tbsp water and leaving in the fridge for at least 15 minutes, or overnight.
- In a large mixing blow, beat the softened vegan butter with the brown sugar and granulated sugar until smooth and fluffy.
- Add the flax egg and vanilla extract and mix to combine.
- In a separate bowl, whisk together flour, cinnamon, salt and baking soda.
- Add the rolled oats to the flour mixture and stir to combine.
- Add the dry mixture to the wet mixture. Fold everything together until combined. The mixture will be thick and sticky.
- Add the raisins and mix to combine.
- Roll the dough into balls and place into your parchment-lined air fryer. Flatten the top of each cookie slightly and air fry at 320F/160C for 12 minutes. Allow to cool before enjoying.
How many cookies can I air fry at once?
This recipe makes about 24 cookies, but you’ll likely only be able to bake 5 or 6 at a time in your air fryer basket, leaving enough room for the cookies to spread out. Plan to do a few cooking batches to bake the entire recipe.
Gluten-free version
If your gluten-free flour doesn’t have any xanthan gum in it, you’ll want to add some to this recipe. Generally, you want to add 1/2 teaspoon for each cup of flour.
If you’re in the UK, I suggest using this flour and adding your own xanthan gum.
Freezing to make them later
To freeze, roll the dough into balls and freeze until firm on a tray. Then remove from the tray and store in an air-tight freezer bag or container until ready to use. Allow dough balls to thaw before air frying as directed in the recipe.
Don’t forget the milk!
In my mind, cookies always go best with a glass of vegan milk or a warm drink, like a cup of coffee or an Oat Milk Latte. These cookies would be perfect on any cookie platter or dessert spread too.
FAQs
Oats themselves are naturally gluten-free, but the concern about oats comes from the fact that they way they are grown and processed often causes cross-contamination with wheat or other ingredients. For people with Celiac Disease or other medical reasons for not eating gluten, learn about the “Purity Protocol” for oats and look for those when shopping.
You can add any mix-ins that you like to these cookies, as long as you keep the total volume to about 1 cup. Try chocolate chips, other dried fruits, white chocolate chunks, or walnuts.

- 1/2 cup Light Brown Sugar
- 1/3 cup Caster/Granulated Sugar
- 1 Flax Egg or one egg
- 1 tsp Vanilla Extract
- 3/4 tsp Ground Cinnamon
- 1 cup Gluten Free All-Purpose Flour
- 1/2 tsp Xanthan Gum Only use if AP flour doesn't have any
- 1 2/3 cup Rolled Oats
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 cup Raisins
Instructions
- Prep the flax egg by whisking together 1 tbsp ground flaxseed + 3 tbsp water and leaving in the fridge for at least 15 minutes (or up to overnight). If using an egg skip this step.
- In a large mixing bowl, beat the softened vegan butter with the brown sugar and caster sugar until smooth and fluffy.
- Add the flax egg and vanilla extract and mix to combine.
- In a separate bowl, whisk together flour, cinnamon, salt and baking soda.
- Add the rolled oats to the flour mixture and stir to combine.
- Add dry mixture to the wet mixture. Fold everything together until combined. The mixture will be thick and sticky.
- Add the raisins and mix to combine.
- Roll the mixture into balls (each should way approx. 30g, about a 1-inch ball) and place on your lined baking sheet. Make sure there is enough space between them to allow for the cookies to spread as they cook. You may need to bake them in 2 batches. Flatten the top of each cookie ball slightly by pushing it gently with your hands.
- Air Fry at 320F/160C for 12 minutes.
- Transfer to the wire rack to cool. The cookies will be very soft in the middle when first removed from the oven but will firm up as they cool.

- If your gluten-free all purpose flour already has xanthan gum as an ingredient, DO NOT add more in. Adding more in will make your cookies gummy.
- Pro Tip: This recipe can be made in the air fryer unit with a basket or the air fryer oven. If you are using the air fryer oven, use the middle rack and select the “Air Fry” function.
