I also love anything that is a taco, or taco inspired. These Air Fryer Sweet Potato Burrito Bowls have all of the flavors of tacos with the veggies you’d come to expect from fajitas. As a bonus, we’ll be crisping up tortillas to use as a topping for your bowls as well. You are going to love this air fryer meal!

I love using sweet potatoes to make filling, hearty, meatless meals. They are delicious with both savory and sweet flavor notes, plus they are quick to cook, especially in the air fryer.

Ingredients you’ll need

  • Flour Tortillas – Cut the tortillas into strips as shown. We’ll crisp them up in the air fryer before we cook the filling.
  • Sweet potatoes – You’ll need two large sweet potatoes. Peel them and cut them into half moons that are 1/4 inch thick. We’ll cut all of the vegetables to the same thickness so that they cook at the same rate.
  • Bell Peppers – Three bell peppers are used in this recipe. I like to use three different colors to keep things interesting.
  • Sweet onion – One onion sliced thinly cooks with the other vegetables and adds tons of sweet, savory flavor.
  • Olive oil – you can use regular oil or an olive oil spray. This helps the seasonings stick to the vegetables and helps things crisp up.
  • Garlic Powder – I haven’t met many recipes that couldn’t use a bit of garlic.
  • Paprika – this spice adds warm flavor and lots of color.
  • Chili Powder – for a slight bit of heat, chili powder is my go-to spice. Add more or less to taste.
  • Cumin – This spice is a must for any taco-inspired seasoning.

How to make these sweet potato bowls

  1. Add the sliced tortillas to the air fryer and spray them lightly with olive oil spray. Air fry at 400F for 3-8 minutes or until they are crisp and golden brown. Remove them to a wire rack to cool.
  2. Place the sweet potatoes, sliced peppers, and onion into a large mixing bowl and add in the olive oil, garlic powder, paprika, chili powder, and cumin. Mix until well-coated. Place into air fryer basket.
  3. Air fry at 400F for 15-18 minutes, shaking the basket halfway through cooking.
  4. Serve the vegetables over rice or a salad, garnished with the crispy tortillas and other add-ins of your choice.

How to serve

Serve this filling with your favorite type of rice. I like to make brown rice in my Instant Pot, but you make yours however you like. If you’re trying to eat less carbs, have it with a salad as a base instead.

Either way, include your favorite burrito fillings/toppings. Here are some suggestions:

  • Diced Avocado
  • Salsa
  • Black Beans
  • Cilantro
  • Lime Wedges
  • Diced Tomato

You could always just roll this sweet potato burrito filling up in soft tortillas and eat it that way too!

Reheat instructions

To reheat the burrito filling you can put it back in the air fryer at 325F for about 5 minutes, until it’s hot. If you’re taking this lunch to work or school, use the microwave and heat for 1-2 minutes.

Are sweet potatoes healthy?

This depends on your personal definition of healthy. I like them in place of white potatoes as they have more vitamins and nutrition. Used here as a replacement for meat, sweet potatoes are a low-fat option. Overall sweet potatoes can be part of a healthy diet.

Do sweet potatoes need to be soaked in water like regular potatoes?

Nope! In this recipe, you can throw them in the air fryer raw, no need to soak them.

  • Pro Tip: This recipe can be made in the air fryer unit with a basket or the air fryer oven. If you are using the air fryer oven, use the middle rack and select the “Air Fry” function.
