Mushrooms are my favorite side dish. They’re earthy, yummy, and perfect with just about anything.

These Air Fryer Stuffed Mushrooms are the best vegetarian appetizer or easy side dish with a few basic ingredients. Plus they’re ready in just 20 minutes!

These delicious button mushrooms are stuffed with red and yellow bell peppers, mozzarella cheese, Italian seasoning, and crushed red pepper. Add them to your next vegetarian charcuterie board or Meatless Monday dinner.

INGREDIENTS IN AIR FRYER STUFFED MUSHROOMS

Button mushrooms: These mushrooms are so easy to stuff and eat! Also known as white mushrooms, just remove the stems and stuff the caps.

Mozzarella cheese: I use melty mozzarella for this meat-free stuffed mushroom recipe. It helps keeps all the filling inside the caps! Plus, who doesn’t love cheese?

Bell peppers: I use red and yellow bell peppers for this vegetarian stuffed mushroom recipe. If you can’t find red and yellow, orange or green would also work!

Italian seasoning: Typically, this universal seasoning blend is a mix of oregano, basil, thyme, and rosemary. It’s great for meat, veggies, sauces, and pasta dishes too!

Crushed red pepper: Add a little heat to your stuffed mushrooms! I love the subtle spice that crushed red pepper adds to this classic appetizer.

Black pepper: The sharp taste of cracked black pepper is the perfect addition to most recipes. It’s got a bit of a kick without overpowering your taste buds.

Salt: Everything is better with just a pinch of salt. Like potatoes, mushrooms need salt to bring out their natural umami flavor.

Oil: A little oil helps these mushrooms cook evenly without sticking to the air fryer basket. It also helps the seasonings stick to the mushroom and not the mixing bowl!

HOW TO MAKE AIR FRYER STUFFED MUSHROOMS

  1. First, gently wash and dry the mushrooms with a kitchen towel. Be sure to scrub off all the dirt by hand. Remove the stems and scoop out any extra in the middle with a small spoon.
  2. Then, season the mushrooms with salt, pepper, and oil in a mixing bowl. Mix well to coat everything evenly inside and out.
  3. To make the filling, mix the mozzarella cheese, yellow bell pepper, red bell pepper, crushed red pepper, Italian seasoning, salt, and pepper. Mix everything until well combined.
  4. Now, stuff the mushroom caps with the filling. To get the mushrooms completely filled, use the back of a spoon to press it firmly inside.
  5. Preheat the air fryer to 350 degrees F — or 180 degrees C!
  6. Finally, place the stuffed mushrooms in a single layer in the air fryer basket or on the air fryer tray. Cook for a few minutes until browned on the outside and melty on the inside. Serve warm!

Like many veggies, they can release some moisture when you cook them. Since this filling is mostly dry with just peppers, mozzarella cheese, and a couple seasonings, they shouldn’t end up too soggy — especially in the air fryer!

Be sure to dry the mushrooms inside and out before stuffing them to get less soggy stuffed mushrooms. The quick cooking method with the air fryer dry heat should also keep these mushroom caps yummy and not squishy!

CAN YOU WARM UP STUFFED MUSHROOMS?

This recipe only makes about 15 mushrooms depending how big yours are. Luckily it’s easy to double, triple, or even quadruple this stuffed mushroom recipe for big parties and tailgating spreads.

If you have leftovers, they’ll last up to 4 days in the fridge. You can easily reheat them! Pop them back in the air fryer for a few minutes until they’ve warmed through.

You can also use a conventional oven or the microwave in a pinch. If you use the microwave, you may get a chewier final product.

Instructions

  • Rinse and clean the mushrooms. Wipe off the extra water with a kitchen towel. Remove the mushroom stem, and scoop out the center with a small spoon.
  • Season mushrooms in a mixing bowl with salt, pepper, and oil. Mix well.
  • In a separate bowl, mix the mozzarella cheese, yellow peppers, red peppers, crushed red pepper, Italian seasoning, salt, and black pepper. Mix well.
  • Stuff the mushroom caps with the cheesy filling, pressing with the back of a spoon to fill it completely.
