What goes better together than eggs and potatoes? Almost nothing, in my opinion. This hash brown and egg breakfast casserole is really easy to put together.
The casserole bakes in the air fryer in just fifteen minutes and will fill up your belly with a delicious, hearty breakfast.
You need just six simple ingredients for this yummy air fryer casserole.

- Frozen Hash Browns – I use the shredded hash brown potatoes that you find in the freezer section.
- Hard Boiled Eggs – Boiled and then diced in a similar size to your potatoes.
- Salt – You will need to season this casserole with a good amount of salt for flavor.
- Pepper – Black pepper is the other simple seasoning in this recipe.
- Milk – Adds moisture to the mixture.
- Flour – Helps to bind everything together. I use gluten-free all-purpose flour. Regular AP flour is fine too.
- Scallions – Optional as a garnish.
- Fresh Parsley– Also optional, but gives a burst of color and freshness to this dish.
how to make it
- Put the frozen hashbrowns in a medium-sized bowl.
- Add 4 hard-boiled and diced eggs to the hash browns.
- In a small bowl, whisk together milk, flour, salt, and pepper and blend until smooth. Combine egg/hashbrown mixture with liquid mixture. Mix to combine. Pour ingredients into an air fryer pot or oven-safe bowl that fits into your air fryer.
- Air Fry at 350F/177C for 15 minutes. Garnish with scallions and parsley before serving.
serving tips
This simple egg and potato recipe is great on its own, but it would be even better with some air fryer bacon or air fryer sausage patties.
You could also just put the breakfast meat inside of the casserole to get all of the flavors melded together. Cook your bacon, ham, or sausage first, and then dice it up before adding to the mixture.
Add some fresh fruit and a cup of coffee and you’ll be ready for a lazy weekend breakfast or a brunch for friends!
reheat instructions
If you want to reheat leftovers of this dish, reheat them right in the air fryer.
Place one to two servings in an air fryer pot or oven-safe bowl and air fry at 350 F for 5-8 minutes until warmed through.
Want to add Cheese?
I’ve always made this recipe without cheese, but I have seen variations on it that include some cheddar cheese either melted inside or on top of the dish. Try it if you are a fan of cheesy casseroles.
