Air Fryer Fajitas Recipe

Just like that sizzling plate of fajitas that you’ve enjoyed at your favorite restaurant, this recipe for Air Fryer Fajitas is perfectly cooked, with tender white meat chicken, peppers, and onions.

The air fryer cooks fajita veggies perfectly, making them soft, but not overcooked, with caramelized brown bits on the edges.

Serve Air Fryer Fajitas on taco night, or try other easy Mexican air fryer meals, like Air Fryer Tostadas or Air Fryer Quesadillas.

Ingredients In Air Fryer Fajitas

Chicken – Boneless, skinless chicken breast is perfect for air frying fajitas. Slice the chicken into thin strips that will cook quickly and easily.

Bell Peppers – Any color bell pepper can be used, but I like to use a variety so that the final dish is extra colorful.

Shallot – Shallots are mild, savory onions that work well in this recipe. Regular onions can also be used.

Spices – Season everything with salt, garlic powder, paprika, and your favorite seasoning for chicken. Try Adobo or any all-purpose spice rub that you enjoy.

Tortillas – Flour tortillas will be filled with cooked chicken and veggies and then air fried so that they crisp up on the edges!

Tomatoes and Parsley – We’ll use these to make a fresh salsa to top the fajitas. If you like cilantro, you can use that too.

How to Make Air Fryer Fajitas

  1. Prepare the chicken breast by slicing it into thin strips.
  2. Add the sliced chicken to a bowl, and mix it with olive oil, salt, and spices. Stir well, and set aside. If you have time, cover and refrigerate the chicken for up to an hour to marinate.
  3. Cut the bell peppers and shallots into thin strips, and add them to the bowl with the chicken. Stir well to combine.
  4. Transfer the chicken and vegetables to the air fryer basket, spreading them out into an even single layer as much as possible.
  5. Air fry fajitas for 12 minutes at 400°F/200°C, then flip and cook again for another 8 minutes, or until the chicken is fully cooked and the veggies are tender.
  6. While the chicken is cooking, chop the tomatoes and parsley to make the topping.
  7. Remove the chicken and veggies from the air fryer basket. Add the filling to 3 or 4 tortillas, then return the fajitas to the air fryer. Reduce the heat to 190°F and air fry for another 4 minutes to crisp up the shells. 
  8. Serve immediately, topped with the chopped parsley and tomatoes, and any other fajita toppings that you enjoy.

Recipe Tips

  • Be sure to slice the veggies thinly so that they will cook at the same rate as the chicken. If for some reason your chicken is done but your veggies are not, you will want to pull out the chicken and give the peppers and onion a few extra minutes.
  • Chicken is fully cooked when it reaches an internal temperature of 165°F/74°C.
  • I like to cook the chicken and the veggies mixed up so that the flavors of each mingle together. You can also put the chicken on one half of the basket and the vegetables on the other if you find it easier.
  • To give the peppers and shallot a bit of char, I don’t suggest lining the air fryer basket with parchment paper. If you want the veggies a bit less cooked, you can add parchment. This makes for easier clean up too!
  • I don’t usually bother to clean the air fryer basket before putting the tortillas in. They will absorb the flavor left behind by the chicken! But if the basket has a lot of residue, you can briefly wipe it out first.
  • Adjust the seasonings. If you like spice, try adding spicy fajita seasoning or a bit of chili powder to the chicken.
  • Marinate if you have time. Letting the chicken chill in the fridge for an hour with the oil and seasonings will give it an even more delicious flavor.
  • Adding the filled tortillas to the air fryer is optional. If you’d prefer the tortillas to be soft, warm them in the microwave or in a hot skillet instead.

Serve these fajitas exactly as shown, or make dinner even more fun, and set up a toppings bar so that everyone can add their favorites! Try any of these fajita toppings and sides:

  • Lime or Lemon Wedges – A bit of citrus pairs beautifully with the flavors of the chicken.
  • Lettuce, cabbage, fresh onions, tomatoes, cilantro, and parsley – these add a fresh, bright flavor.
  • Guacamole, cheese, sour cream, or Mexican crema – any of these will add a creamy finish to the meal.
  • On the side, serve Seasoned Black Beans and Spanish Rice.

Can I use onion instead of shallot?

Yes! I enjoy the lighter, sweeter flavor that shallot adds to this recipe, but any type of onion can also be used.

What is the best seasoning for chicken fajitas?

I’ve left the seasonings up to you in this recipe! Along with garlic, paprika, and salt, add in whatever seasonings you love to use on chicken. Taco or fajita seasoning is perfect, or try an all-purpose seasoning like Adobo.

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • salt to taste
  • 1/3 tsp granulated garlic
  • 1/3 tsp ground paprika
  • 1/3 tsp all-purpose seasoning such as Adobo or Chicken Rub
  • 2 bell peppers
  • 2 shallots
  • 3-4 tortillas
  • fresh parsley
  • 6-7 cherry tomatoes
  • lime

Instructions

  • Pat the chicken dry with paper towels. Then cut it into thin strips and put in a bowl.
  • Add olive oil, salt and all spices to the bowl, mixing thoroughly. Cover and keep efrigerated for up to an hour if needed while you prepare the rest of your meal.
  • Cut the bell pepper and peeled shallot into thin strips
  • Add the vegetables to the bowl with the chicken and stir well to combine.
  • Transfer the chicken with peppers and onions to the air fryer basket in a single layer. Cook for 12 minutes at 400ÂşF/200ÂşC.
  • Flip the chicken and vegetables to the other side and cook for another 8 minutes at 400ÂşF/200ÂşC, or until the chicken is fully cooked.
  • While the fajitas are air frying, finely chop the tomatoes and parsley.
  • Remove the chicken and veggies from the air fryer basket. Add the filling to 3 or 4 tortillas, then return the fajitas to the air fryer. Reduce the heat to 190°F and air fryer for another 4 minutes to crisp up the shells.
  • Add the chopped tomatoes and parsley to the tortillas and serve the fajitas immediately. Drizzle with lime juice.
