- 1 lb salmon skinless, boneless
- 8-10 zucchini slices
- 8-10 bell pepper pieces
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp dried herbs
Instructions
- Cut the salmon into 1-inch pieces and place them in a medium bowl. Add 2 tablespoons of olive oil, half of the salt, all the paprika, and half of the dried herbs. Gently mix until evenly coated. (Let the salmon marinate at room temperature for 5–10 minutes while you prepare the vegetables.)
- In a separate bowl, add the zucchini slices and bell pepper pieces. Drizzle with the remaining olive oil, then add the rest of the salt and herbs. Mix until everything is evenly coated.
- Assemble the skewers by alternating salmon pieces with the vegetables. Place the skewers in the air fryer basket in a single layer, making sure they don’t overlap.
- Air fry at 360°F (180°C) for 8 minutes. Halfway through the cooking time (around 4 minutes), carefully flip the skewers to ensure they cook thoroughly on all sides.
