  • Use extra-ripe bananas. For banana bread, the riper your bananas are, the sweeter it’ll be. Make sure your bananas are full of brown speckles and ripe enough to easily mash with just a fork. 
  • Cover your banana bread with aluminum foil halfway through cooking. Some air fryers have heaters on both the top and bottom. Mine doesn’t (it only has one on the top), so to ensure the top of my banana bread didn’t get too crispy or burn, I covered the loaves with aluminum foil halfway through cooking. 
  • Let your banana bread rest. For best results, let your banana bread sit for 5 minutes before slicing into it. You can do this in your unplugged air fryer or on the kitchen counter. 
  • Use aluminum foil mini loaf pans. The only challenge of baking in your air fryer is finding the right air-fryer-safe containers. I made this recipe with two mini disposable aluminum foil bread tins, which fit perfectly side by side in the air fryer. 

How to Store Air Fryer Banana Bread 

Air fryer banana bread will last for 3-4 days wrapped in plastic wrap on the kitchen counter and up to 7 days in the refrigerator. (Although mine didn’t even last 24 hours; they were so good we devoured these mini loaves in record speed. 😆)

You can also freeze air fryer banana bread. Just remove it from the cooking container and wrap it in plastic wrap. It’ll last 3-4 months in the freezer. Then, just let it thaw on your counter before enjoying it!

  • 3 bananas ripe
  • 4 tbsp butter softened
  • 4 tbsp vegetable oil
  • 1/3 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp salt

Instructions

  • Preheat your air fryer to 320°F (160°C) for 5 minutes.
  • Peel and mash the bananas in a large mixing bowl. Add softened butter, vegetable oil, white and brown sugar, egg, and vanilla and mix until well combined.
  • Add the flour, baking soda, and salt to the mixing bowl and mix until combined.
  • Grease your baking containers and add the batter to the containers.
  • Air fry at 320°F (160°C) for 20 minutes.
  • Carefully remove your banana bread tins from the air fryer and cover them with aluminum foil. Return to the air fryer for 10 more minutes at the same temperature.

Notes

  • If you cook two pans at once, rotate your pans halfway through. This isn’t always a problem since air fryers are supposed to circulate air evenly, but every air fryer is different!
  • This recipe can be made in an air fryer unit with a basket or an air fryer oven. If you are using an air fryer oven, use the middle rack and choose the “Air Fry” function.
  • Check your food as it cooks. Each air fryer runs a bit differently. Make sure to check your food as it’s cooking to learn your air fryer better and avoid over- or undercooking.
