Butternut squash is a type of produce that I really didn’t become accustomed to until I was an adult. Now, I can’t get enough of this fall treat!

There is just something that is completely comforting about this hearty flavorful squash.

I love that it is packed with some vitamin A and some other vitamins!

  1. Wash the butternut squash to remove any debris or dirt.
  2. Peel the squash, cut the squash in half lengthwise, and remove the seeds.
  3. Using a sharp knife, cut the squash into bite-sized pieces.
  4. Drizzle the maple syrup over the cubed squash.
  5. Then add paprika and garlic powder over the squash. Stir to combine well.
  6. Air Fry the squash at 380F/193C for 20-22 minutes. Be sure to stir (or shake basket) to mix up the squash at least two times during the cooking process

Recipe tips and tricks

  • Use a sharp knife. You need to be careful but a sharp knife is needed to cut the squash.
  • Use a high-quality vegetable peeler. Complete disclosure, I broke mine while taking pictures of this recipe.
  • If you are using small squash, you can use one than one. If you have a lot of cubes, you may need to adjust the cooking time to get it evenly cooked.
  • Use different spices. If you have a special combination of spices you like, use them! Make this recipe your own!
  • This recipe can be made in an air fryer with a basket or tray. If you are using a tray, I suggest putting it on the middle section.
  • If your air fryer has more than one function, I would suggest using the “Air Fryer” function.
  • This air fryer recipe DOES reheat well, so you can make this dish ahead of time and reheat or you can use it for meal prep.

what to serve with butternut squash

If you are using this as a holiday side dish, you can serve it with other holiday air fryer recipes such as Air Fryer Sweet Apples, Air Fryer Potatoes and Air Fryer Green Bean Casserole.

You can serve this recipe with some sauteed asparagus. I like to cut my asparagus into bite-sized pieces, saute them, and then mix it with these air-fried butternut squash pieces.

If you do not want to eat this dish plain, you can serve it over a bed of greens, and top with some pumpkin seeds, cranberries, and your favorite dressing. It will make a filling and beautiful salad.

  • 1/2 t paprika
  • 1/2 t garlic powder

    Thank you for posting, butternut squash is a favorite plus I am new to air frying and I’ve been finding new recipes daily.

    1. I am not sure, I haven’t tried it, but I think its worth a try! That would be awesome if that worked. I shop at Costco all the time!
