Making these air fryer oatmeal creme pies at home has been a game changer for me. I make them at home in my air fryer, freeze them, and then have treats ready when the time calls. As a bonus, freezing them helps me to not eat them all at once!

  • Egg – I use large-sized eggs in this recipe. I prefer to let my eggs sit on the counter for about 30 minutes before using it in a recipe.
  • Rolled oats – Use your favorite brand of oats for this recipe.
  • Unsulfured molasses – Molasses helps to keep the cookies moist and provide a chewier texture.
  • All-purpose flour, unbleached – You can use all purpose gluten or gluten-free flour for this recipe.
  • Baking powder – This helps the cookie to expand side to side and rise a touch.
  • Baking soda – This helps the cookies rise.
  • Spices – The combination of ground Cinnamon and Nutmeg bring subtle flavor notes to the cookies. These spices are warm and inviting, and pairs so well with oatmeal.
  • Sugar – A combination of white and brown sugar in cookie recipes gives the perfect somewhat soft, somewhat crispy texture.
  • Butter -These cookies are soft and chewy using vegan butter. Soften the butter before you start mixing.
  • Powdered Sugar – Be sure to sift your powdered sugar as it helps to remove lumps.
  • Vanilla – a good quality pure vanilla extract is a must for this recipe.
  • Marshmallow Fluff – Be sure to use marshmallow fluff and not melted marshmallows are they are not the same and this will change the outcome of the recipe.

Directions to Make

  1. Process the rolled oats in a food processor. 
  2. In a mixing bowl, add the oats, flour, baking soda, baking powder, cinnamon, sugar, and nutmeg.
  3. In another mixing bowl add the sugar, brown sugar, and butter. Mix until fluffy. Add the egg, then add the vanilla and molasses. 
  4. Add the flour and oats mixture together. 
  5. Form batter into a ball. Air fry at 350F/176C for 8 minutes or until firm and cooked through.
  6. In a mixing bowl, combine the butter and powdered sugar until creamy. Add the vanilla and marshmallow. Place a tablespoon of filling between two cooled cookies.

Storing in the fridge

You should store these in an air-tight container. I like to store the container in my fridge for up to one week.

Freezing for later

Yes, you can freeze oatmeal creme pies. Be sure to wrap the creme pies individually, then place them in a freezer-safe container. When ready to eat, thaw on the counter for around 15 minutes.

Cookie Ingredients

  • 1 egg
  • 1 cup rolled oats
  • 1/8 cup molasses
  • 1 cup all-purpose flour
  • 2 T all-purpose flour
  • 1/2 T baking powder
  • 1/4 t baking soda
  • 1/2 cup brown sugar dark
  • 1 t cinnamon
  • 1/4 cup sugar
  • 1/4 t nutmeg
  • 1/2 t vanilla extract
  • 1/2 cup butter softened

Cookie Filling

  • 3 T butter softened
  • 1/3 cup Powdered sugar
  • 1 t vanilla extract
  • 7 oz marshmallow fluff

Instructions

  • Process rolled oats in a food processor, pulsing 10 times to vary size of oats.
  • In a mixing bowl, add oats, flour, baking soda, baking powder, cinnamon, sugar, and nutmeg. Mix thoroughly.
  • In another mixing bowl add the sugar, brown sugar and butter. Mix until fluffy. Add the egg, then add the vanilla and molasses.
  • At the flour and oats mixture 1 cup at a time while mixing.
  • Using a small cookie scoop, scoop batter and form into a ball. Place batter on sprayed foil in the air fryer basket.  Cook on 350F/176C for 8 minutes or until firm and cooked through.
  • Set cookies aside to rest.
  • In a mixing bowl, combine the butter and powdered sugar until creamy. Add the vanilla and marshmallow and mix for 5 minutes.
  • Place a tablespoon of filling between two cooled cookies.
