French fries are one of my favorite snacks. Give me some ketchup and some crispy potatoes and I am a happy camper. Potato wedges in the air fryer satisfy a craving for french fries with out deep frying in oil. We're only using a little bit of olive oil to make these fries nice and crispy.
INGREDIENTS IN AIR FRYER POTATO WEDGES
Russet Potatoes - Using russets to make wedges give you long, thin pieces.
Olive Oil - I like to use a light olive oil for air frying. This give the potato wedges their necessary crispiness, and helps the seasonings stick to the potatoes.
Kosher Salt - This is a must have for me. Salty fried potatoes are just so good! Adjust the salt for your own dietary needs if necessary.
Black Pepper - Simply seasoned potatoes need a bit of black pepper for heat and balance.
Smoked Paprika - Paprika adds color, and smoked paprika adds a smoky, warm flavor.

WHY DO YOU SOAK POTATOES BEFORE AIR FRYING?
Soaking cut potatoes in cold water before frying or air frying them is a pro tip! Soaking pulls starch out of the potatoes, making them less sticky and better able to cook up crispy. It makes the inside texture of the fries fluffier as well.
WHAT KIND OF POTATOES TO USE FOR WEDGES?
I use russet potatoes for a couple of reasons. One, they are typically long, slender potatoes, so they are shaped perfectly for cutting wedges. Other potatoes are more spherical, and won't make good wedges. Secondly, the texture of russet potatoes is just preferred when making french fries in the air fryer. It's lighter and fluffier when cooked since Russets are less waxy than yellow or white potatoes.
WHY ARE MY AIR FRYER FRIES SOGGY?
Oh no, we don't want soggy fries in the air fryer! Be sure to follow the recipe instructions fully for best air fryer fries results. For this recipe, make sure to do the following:
- Soak cut potatoes in cold water for at least 15 minutes and dry thoroughly.
- Cook air fryer potato wedges in a single layer in your air fryer. Resist the urge to stack them on top of each other.
