I love using my Air Fryer to bake potatoes, and sweet potatoes are no exception. Air Fryer Baked Sweet potatoes come out perfectly soft and tender every time and are ready in less than 45 minutes.
List of ingredients
- Sweet Potatoes – Choose medium-sized sweet potatoes for roasting in the air fryer. Always wash sweet potatoes before cooking.
- Avocado Oil – Any neutral oil will work here. The oil helps the skin of the potato to get a bit crispy. Olive oil or vegetable oil works just the same.
- Tomato – This is the base of our salsa topping. Choose fresh, ripe tomatoes. I like Roma tomatoes for salsas like this.
- Black Beans – Canned beans work perfectly, drain and rinse them.
- Corn – Frozen corn kernels, thawed, are the easiest thing. If you have fresh corn available, use that instead.
- Red Onion – I love the bite that raw red onion gives.
- Jalapeno – a fresh avocado, diced, adds heat to the dish.
- Cilantro – An excellent complement to the Mexican ingredients.
- Lime – the juice of one lime dresses the salsa and adds a lovely bit of acidity.
- Salt – To season everything well.
- Hot Sauce – A bit of Tabasco or your favorite hot sauce gives the perfect amount of heat.
Direction to make
- Pierce the sweet potatoes a few times with a fork. Rub them with avocado oil and place them in the basket of the air fryer.
- Air fry at 400 degrees F for 35-40 minutes, or until tender.
- While the potatoes are cooking, make the salsa. In a mixing bowl, add tomatoes, beans, corn, onion, jalapeno, cilantro, lime juice, and salt. Stir to combine, cover, and refrigerate until ready to use.
- Split open cooked potatoes and serve filled with the fresh black bean salsa.
How to serve
These potatoes really are an entire meal on their own, perfect for serving as is, however, you can enjoy them as a side dish as well!

There are so many options!
To keep this recipe vegan, you could add your favorite vegan meat substitute. Otherwise, taco-seasoned meat or diced chicken could be added.
Cheese or vegan cheese would be amazing on these too. I suggest adding the cheese under the salsa so it has a chance to melt a bit.
Sour Cream (or a vegan substitute), Guacamole, or a tomato salsa on top would be so great too.

- 4 Sweet Potatoes medium sized
- 1 tbsp Avocado Oil
- 1 cup Tomato diced
- 1 cup Black Beans drained and rinsed
- 1/2 cup Corn Kernels frozen
- 1/4 cup Red Onion diced
- 1 Jalapeรฑo Pepper diced, seeds removed
- 2 tbsp Fresh Cilantro finely chopped
- 1/2 tsp Kosher Salt
- 1 Lime juiced
- Hot Sauce to taste
Instructions
- Pierce the sweet potatoes a few times with a fork, then place them in the basket of the air fryer. Rub with avocado oil.

Notes
- If you want your salsa extra hot, don’t remove the seeds from the jalapeno.ย
- This meal works really well for meal prep. Keep refrigerated until ready to eat, up to 5 days.ย
- Pro Tip: This recipe can be made in the air fryer unit with a basket or the air fryer oven. If you are using the air fryer oven, use the middle rack and select the “Air Fry” function.
- Pro Tip: Check your food as it cooks. Each air fryer runs a bit differently. Sometimes airfying is a trial and error process. Check your food as it cooks to learn your air fryer better! When cooking a new recipe or food items be sure to check your food often to help avoid over/under cooking.
