Air Fryer Turkey Patties

Ingredients
- 1 lb roasted turkey (leftover)
- 2 eggs
- 1/2 cup Greek yogurt
- 2 onions yellow
- 1/3 cup breadcrumbs
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp ground coriander
- 1/4 tsp salt
- 1/2 tsp pepper
- fresh dill or parsley
- olive oil spray
Instructions
- Preheat your air fryer to 400ºF (205ºC).
- Debone leftover turkey meat from the thighs, legs, and breast of a cooked turkey. Shred the roasted turkey in a blender.
- Blend the peeled onion and add it to the bowl with the turkey.
- Add eggs, salt, and spices to the bowl.
- Add Greek yogurt, breadcrumbs, and a few pinches of black pepper. Mix thoroughly.
- Chop finely and add fresh dill or parsley.
- Line the air fryer basket with parchment paper and drizzle with olive oil. With wet hands, make patties and place on parchment paper. Air fry for 8 minutes at 400ºF (205ºC).
- After 8 minutes, the patties will become golden in color. Carefully flip them to the other side and cook for another 3 minutes.

- Cook your turkey patties in batches. Don’t overcrowd your air fryer basket. To get that rich, golden-brown texture, make sure the turkey patties have enough space to cook.
- This recipe can be made in an air fryer unit with a basket or an air fryer oven. If you are using an air fryer oven, use the middle rack and choose the “Air Fry” function.
