  • Make sure to flip your turkey patties. To ensure these air fryer turkey patties come out crispy and evenly cooked, make sure to air fry for 8 minutes, then flip and air fry for an additional 3 minutes. 
  • Add freshly chopped herbs. Adding a few tablespoons of freshly chopped dill or parsley adds an extra bit of flavor and makes these turkey patties truly unique.

Ingredients

  • 1 lb roasted turkey (leftover)
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 2 onions yellow
  • 1/3 cup breadcrumbs
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground coriander
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • fresh dill or parsley
  • olive oil spray

Instructions

  • Preheat your air fryer to 400ºF (205ºC).
  • Debone leftover turkey meat from the thighs, legs, and breast of a cooked turkey. Shred the roasted turkey in a blender.

  • Blend the peeled onion and add it to the bowl with the turkey.

  • Add eggs, salt, and spices to the bowl.

  • Add Greek yogurt, breadcrumbs, and a few pinches of black pepper. Mix thoroughly.

  • Chop finely and add fresh dill or parsley.

  • Line the air fryer basket with parchment paper and drizzle with olive oil. With wet hands, make patties and place on parchment paper. Air fry for 8 minutes at 400ºF (205ºC).

  • Cook your turkey patties in batches. Don’t overcrowd your air fryer basket. To get that rich, golden-brown texture, make sure the turkey patties have enough space to cook. 
  • This recipe can be made in an air fryer unit with a basket or an air fryer oven. If you are using an air fryer oven, use the middle rack and choose the “Air Fry” function.
