Gather the ingredients

Overhead shot of ingredients required for air fryer egg and bacon stuffed biscuits: Flour, butter, milk, eggs, bacon and cheese
  • Flour – Self-raising flour is exactly the thing needed to make these easy biscuits.
  • Butter – These biscuits are soft and chewy using butter. Shred the butter before you start mixing with the flour.
  • Milk – This makes our biscuits nice and creamy.
  • Eggs – In general, we use large-sized eggs in our recipe. I prefer to let my egg sit on the counter for about 30 minutes before scrambling.
  • Bacon – You can’t have egg and bacon stuffed biscuits without bacon!
  • Cheese – I used American cheese in this recipe.

Storing leftover biscuits

These biscuits will keep for 2-3 days in the fridge as long as they are in an airtight container. Any longer, and you may find that they start getting soggy!

They can also frozen for up to two months when stored in an airtight container or freezer bag!

Reheat Instruction

Remove them from the fridge and place them in the air fryer for 1-2 minutes! If you want to reheat from frozen, remove from the freezer and air fry for 2-3 minutes.

Recipe Tips

Pro Tip: This recipe can be made in the air fryer unit with a basket or the air fryer oven. If you are using the air fryer oven, use the middle rack and select the “Air Fry” function.

Pro Tip: Check your food as it cooks. Each air fryer runs a bit differently. Sometimes airfrying is a trial-and-error process. Check your food as it cooks to learn your air fryer better!  When cooking a new recipe or food items be sure to check your food often to help avoid over/under cooking.

Ingredients

  • 2 cups Flour self raising
  • 4 tbsp Butter cold, cut into pats
  • 23 cup Milk or buttermilk, plus more if needed
  • 4 Eggs scrambled
  • 6 slices Bacon cooked, diced
  • 2 slices Cheese I used American cheese, quartered

Instructions

  • Add to your large bowl your flour, and butter (pro tip: shred your butter with a cheese grater. This allows the butter to incorporate into the flour better.). Using a pastry cutter, or your hands, work the butter into the flour until they resemble crumbs the size of large sized peas.
Large bowl containing flour and butter
  • Slowly add 2/3 cup of milk and continue to mix until your mixture holds together. Add more (up to 3/4 cup) if your mixture needs more liquid in order to hold together.
Transfer your ball of biscuit dough to a lightly floured flat surface.
Biscuit dough on a floured surface ready to be rolled with brown rolling pin
  • Using a round cutter (I love to also use a large mouth mason jar!), Cut 16 round circles.
To eight of your circles, evenly distribute your scrambled eggs, and bacon pieces. Top your eggs and bacon with a slice of cheese.
14 discs of dough cut for filling
  • Add another biscuit circle on top of the cheese and pinch together to secure the sides of your biscuits.
